I did say that I was going to try the recipe I posted earlier and report back so here is my feedback. The recipe is easy and the cookies turned out soft and moist; the cookies I sampled at the concert were pretty hard in comparison. I used Bob’s Redmill all-purpose flour and gluten-free oats. I am watching my cholesterol so I used egg substitute instead of real eggs. I was using dark cookie pans and 15-minutes at 325 degrees was perfect but you should judge by the color of your cookies as to how long you leave them in the oven. (The recipe calls for 12 minutes)
